Award-winning chef Sandeep Chatterjee lived and worked in Indian cities such as Chennai, Mumbai and Kolkata before making his way to Australia via London’s Bombay Brasserie. You can taste his well-travelled history in Indigo’s menu, with flavours from all around India. Portraits of past Indian royalty line the walls of this brightly lit, Bollywood-themed eatery, but the focus is on the ever-changing traditional menu with a contemporary slant. Standout entrees include a crunchy and summery Delhi dahi papdi $9.95 and a mini masala dosa (rice and lentil pancake) $9.95. Chicken pista korma $18.95 is a creamy curry heaven. Vegetarians have a multitude of options, including baigan ka salan, eggplant cooked with cashews and Hyderabadi spices $14.95. Top it all off with a cardamom-flavoured creme brulee $8.90 and you’ll go home satisfied.
