There’s some lovely small cavolo nero, or ‘Tuscan kale’, around at the moment which has a firmness reminiscent of silver beet and a great, gutsy flavour. Da Gianni Trattoria partners it with other strong flavours of pancetta and blue cheese in their orecchiette pugliese, a treatment that sees it shine. Orecchiette are the little ear-shaped pasta bits that are traditionally cooked with mashed broccoli and there’s been plenty of that around, too. Blancmange serves it as a vegie accompaniment with pinenut butter. Delicious.
