Lamb is in good supply thanks to recent rains. You'll find it as ever on Greek menus around town.  Corinthian Rotisserie in Marrickville is spit-roasting it and serving it as soft as butter with lemony potato.  And try the saag gosht, lamb with spinach, at Bijolias at Seaforth.

Paul McGrath is roasting a loin of Melanda Park free-range pork at Bistro Ortolan and serving it with potato and hazelnut dauphinoise and roasted baby vegetables.
