January is the time to gorge on stone fruit as most varieties are peaking. Try white nectarines in the sorbet at Pompei’s and luscious mixed berries in one at Glace. It’s also watermelon time and Rocket serves it for dessert with lemon, lime and bitters jelly, white peach sorbet and citrus salad. Raspberries appear in a soufflé there, too, served with vanilla bean icecream.

Slow-roasted stone fruit team up with almond pithivier and cinnamon gelato at Berowra Waters Inn and fresh raspberries make a good accompaniment to caramel mousse with dark chocolate there, too. But fruit doesn’t always have to be a dessert thing; try white peaches in a salad at Uccello with endive, radicchio, baby rocket and goat’s cheese.
