Michelle Guberina is a convenor for Slow Food Sydney and has recently quit her day job to start patisserie, café and cooking school Patisse (107 Young Street, Waterloo, Ph 9690 0665, www.patisse.com.au). Classes in the arcane arts of making pastries kick off at the beginning of July with a lesson on the basics — how to make sweet, short crust and savoury pastry — with house patissier Chris Burge, and continue on through to mid-November with the final class teaching panforte, saporelli and other seasonal goodies.
