Bilson does wine

One of the first of the new generation of small bars off the block is Tony Bilson’s Number One (1 Alfred St, Circular Quay, Ph 8252 9296) with a Spanish chef from Murcia, Miguel Maestre, offering Frenchified Spanish share plates — moules mariniere, prawns al ajillo, duck parfait with grilled brioche — as well as classics like pot au feu, paella and bouillabaisse. Sit at the bar and nibble and sip from an interesting wine list or move to a table. It’s a casual space and place with some of Mr Bilson’s own art on the walls; and some of his favourite wines on the list. And another thing: the kitchen is open until 11.30pm, perfect for after-theatre supper. From noon Tuesday to Saturday.
